Ok, we all know about this cut thanks to someone who decided it is great. And it is! However, it is a very small set of muscles on the entire yak and we often run out of this cut because of that. Our other favorite is Bavette steak, which has a somehwat different muscle structure but is also phenomenal. Marinate and throw it on the grill, or just season with salt and pepper and give it a char, leaving it rare inside. Amazing!
