Is there anything more primal than the pure heart of a healthy animal? Yak heart is smooth and firm with a mild, delicious flavor. It can be prepared in a number of ways, from quickly pan searing the slices, to slow braising for many hours producing a rich, nutrient-dense stew. Both are excellent and yak heart is a great way to ease into eating organ meats.
