Those who enjoy dishes made with beef tongue will love the delicacy and richness of yak tongue. We have tried Spanish and Chinese recipes which were excellent. A favorite was poaching in whole Chinese spices and then pan frying slices, sprinkled with cilantro and green onion.

Yak liver is more mild than beef and doesn't have the metallic flavor that beef liver sometimes has. It is a popular cut for people wishing to add a clean superfood to their diet and we often sell out quickly! Our yak liver is delicious and we love pan frying it in yak fat or butter, with onions, capers and a little vinegar.

This cut has a dedicated following, and for good reason. It is a beautiful, exceptionally lean steak. It can be cooked on the stovetop, grilled, or sliced thinly and added to stir frys or our favorite, yak pho!


Yak Flat Iron Steak

This is an incredible steak for grilling. Absolutely delicious. If you know, you know. 

If you don't know, we recommend this and Bavette as our top favorites. A slightly lower temp and smoldering coals and a mild spice rub. Delicate and rich, this is one beautiful cut. 


Yak Bavette Steak

This is one of our favorites! Also known as "Flap", this cut is absolutely beautiful on the grill with a simple rub and left rare in the center. It pairs well with a wide range of cuisines and can be added to dishes or served alone. A "must try" for grilling season!

Yak Stew Meat

Stew Meat - Firebird Farms

Chunks of lean whole yak muscle ready for stews, pot pies, curries and braised dishes. Brown in a pan and add to your favorite recipes. Make sure to allow time for the meat to become beautifully tender. Each package is one pound. This is by far the easiest and fastest way to feel like a professional stew expert after a long day doing other things.


Ground Yak Sirloin

Our ground yak sirloin is simple and refined. With 7% yak fat, it is lean like chicken breast, with a silky, delicate texture. It is absolutely amazing both as a burger or cooked and served cold on salad. The ground sirloin makes an excellent yak bolognese, Indian style curry, and picnic food because it still shines when served cold. Yak cooks faster than beef and is naturally juicy, so watch to ensure it doesn't overcook.


Ground Yak Chuck

Our ground yak chuck is made from the forequarter of the animal and has a robust texture for a classic burger. With around 13% yak fat, it is flavorful and versatile for many styles of dishes. Excellent for everything from yak pasta dishes, meatballs, curries and tacos to an classic burger. We like to cook burgers medium-rare to enjoy the beautiful meat. Yak cooks faster than beef and is naturally juicy, so watch to ensure it doesn't overcook.
